Description

Vermicelli or Seviyan is a special type of noodle, but it is significantly thinner. It is made out of semolina (sooji). Vermicelli itself does not have a strong taste, that’s why it can be added into many different dishes to absorb the taste. Vermicelli has many health benefits, for example, it has Zero Fat, is very low in Sodium and contains no cholesterol.

Here are some recipe ideas for you:

Sevaiyan ki Kheer:

Heat ghee or oil in a pot. Add Vermicelli and sauté on low flame. Add water and milk. Let the vermicelli cook. Add sugar, cardamom or other sweet spices to taste.

Sheer Kurma:

Roast the vermicelli in ghee or without, according to your preference and set aside. Heat ghee and add dried fruits and nuts to roast. Heat milk and let simmer for around 10 minutes until the milk thickens. Add the roasted seviyan and sugar and let simmer for another 10 minutes. Add dry fruits and cardamom powder.

Sev Birjani:

Heat ghee and add chopped onions, green chillis, garlic and ginger. Sauté until golden brown and add your preferred vegetables. Let the vegetables cook and on a low flame add turmeric, chicken masala and chilli powder. Then add curd, mint and coriander. Add water and bring to a boil. Finally, add seviyan and boil for 5 minutes.
