Curd Rice Recipe:
This fast, easy dish is perfect if you need a quick side dish or if you don’t have much time.
In a small pan heat oil and add mustard seeds and cumin seeds. When they start to splutter add urad dal and fry lightly. When brownish add grated ginger, curry leaves and halved red chillies. Sauté and let cool to room temperature. Now mix steamed rice with and mash it with the backside of a spoon. Add curd and mix well. And then add milk and stir. Now add the cooled tempering, a grated carrot and finely chopped coriander leaves. Mix everything well and serve chilled.
