Nutrition Fact: Quinoa is gluten-free, high in protein and one of the few plant foods that contains all nine essential amino. It is also high in fibre, magnesium, potassium, calcium, phosphorus, Vitamin B & E, iron and various beneficial antioxidants.

IMPORTANT NOTE: Soak quinoa overnight in at least twice as much water. Add a tablespoon of lemon or apple cider vinegar. Rinse off the grains in the morning, and then cook it as like poha or daliya.

Quinoa is a grain crop which possesses edible seeds. These seeds are what we call quinoa — pronounced Keen-wah. They are full of nutrition.

Although it’s usually lumped in with cereal grains, like oats and barley, quinoa is actually a pseudo cereal grain.

In other words, most prepare and eat the seed similarly to a grain. Further examples of pseudo cereal grains include buckwheat and amaranth.
