Health Benefits – Malabar spinach is a wonderful variety of spinach that provides a good amount of vitamins A, B1 (thiamine), B2 (riboflavin), B6 (niacin) and C, as well as the minerals calcium, iron, phosphorus, magnesium, potassium and sodium. Its leaves are rich source of Beta Carotene, Lutein and Zeaxanthine that hep fight free radicals and protect against several diseases. Its fleshy leaves and mucilage helps in digestion.

Use and Storage – Poi Saag is cooked in the similar fashion as spinach. It gives a very awesome flavour and high fibre when added to a smoothie preparation. Simple light saute of Poi leaves in white butter or desi ghee sprinkled with rock salt to taste, makes it a wonderful dish. Some choose to add tender leaves to omelette for breakfast.
Shelf life of Poi saag is much longer than any other green. It can last upto 3 days without refrigeration. It is advised to wrap it in moist cotton cloth for longer freshness.
